Brussels sprouts with bacon are a classic combination. Ours are thinly sliced and sautéed in rendered bacon fat for extra umami.
Add the oil and preheat the pan to 350°F/175°C (medium).
Cook the bacon for 5 minutes at 350°F/175°C (medium)or until the bacon has rendered down. Stir occasionally.
Using a slotted spoon, carefully remove the bacon from the pan and place it into a paper towel lined bowl. Keep the bacon fat in the pan.
Increase the temperature to 375°F/190°C (medium).
Cook the brussels sprouts for 4 minutes and 30 seconds or until they have softened. Stir frequently. Once fully cooked, remove from the heat.
Fold the bacon back into the brussels sprouts.
Stir in the sherry vinegar and season to taste.
