2. Add the Ingredients and Begin to Caramelize the Sugar

Stir into the cold pan until well incorporated. Set the burner to Power Level 5 and and cook for 10- 11 minutes stirring frequently until the mixture looks slightly thicker.

3. Add the Almonds and Continue to Caramelize the Sugar

5. Quickly Add the Baking Soda and Fleur de Sel

Turn the heat off, and using a rubber spatula, vigorously stir the baking soda and fleur de sel into the caramelized sugar until well incorporated and foamy.

6. Remove the Brittle

Use a spatula to carefully transfer the brittle to the parchment-lined baking sheet. Spread quickly and evenly.

7. Garnish and Cool the Brittle
