Spray a baking sheet with nonstick spray and line it with parchment paper. Reserve close at hand.
Stir into the cold pan until well incorporated. Set the burner to Power Level 5 and and cook for 10- 11 minutes stirring frequently until the mixture looks slightly thicker.
Continue cooking for 2 minutes stirring occasionally.
Stir in the ingredients and continue cooking for 30 seconds until well incorporated.
Turn the heat off, and using a rubber spatula, vigorously stir the baking soda and fleur de sel into the caramelized sugar until well incorporated and foamy.
Use a spatula to carefully transfer the brittle to the parchment-lined baking sheet. Spread quickly and evenly.
Evenly sprinkle the Maldon salt over the brittle. Allow the brittle to cool completely and then break it into pieces. Serve or store in an air-tight container.
