Add the ingredients into the pan and mix until the sugar is fully dissolved.
Set the tempeature to 240°F/ 115°C (medium) and cook for 1-2 minutes or until the liquids come to a simmer. While the liquids come up to temperature, place the sliced onions into a bowl.
Turn the burner off, then pour the pickling liquid over the red onions and cover with plastic wrap. Let onions soak for about 30 minutes or until tender.
