This classic French dish is perfect to make in our exclusive non-stick pan for that perfect glossy and smooth finish.
Preheat the Non- stick pan to 250°F/ 120°C (medium- low), then add the butter and melt completely.
Whisk the eggs until the whites and yolks are well incorporated. Lightly season with kosher salt and black pepper.
Add the eggs to the pan and stir to create small curds, making sure not to scramble them. Allow to cook for 25 seconds.
At this time add any fillings like shredded cheese and continue cooking for 2 minutes without stirring or moving the pan.
Turn the heat off, then tilt the pan on a steep angle and gently work the eggs down, rolling them to the edge. Form a slight oval shape at the edge of the pan and flip onto a plate.
Garnish with butter and chives, or your favorite toppings.
