Sautéing this broccoli over high heat helps bring out that rich umami flavor for a recipe as healthful as it is delicious.
Add the oil then preheat the pan to 375°/ 190°C (medium).
Add the florets to the preheated pan and roast for 8 minutes or until the broccoli chars on all sides.
While the broccoli chars, season with salt and pepper.
Turn the heat off, then transfer the broccoli to a towel lined tray or plate. If you have more broccoli, repeat the cookign steps until all florets are charred.
Return the pan to the burner, add the oil and preheat to 300°F/ 150° (medium).
Cook the aromatics for 1 minute or until slightly toasted.
Add and toast the chili flakes for about 15 seconds, making sure it does not burn.
Toss the charred broccoli into the aromatics and mix until well combined.
Turn off the heat and season the broccoli with a squeeze of lemon and some lemon zest. Serve as desired.
