The Perfect Burger: 6 ounces of juicy ground beef, ready for your favorite toppings.
In a large bowl, mix the ingredients with your hands until well incorporated.
Divide the hamburger mixture into 4 balls roughly the size of a baseball (6 oz) and then flatten them into 3/4 inch thick patties. Transfer the patties to a plate and allow them to come up to room temperature.
Add the oil and preheat the pan to 375°F/190°C (high).
Season 2 hamburger patties at the time with kosher salt on both sides.
Place two hamburger patties in the pan making sure they do not touch. Cook the first side of the patties for 4-5 minutes for medium rare to medium or for 7-8 minutes for medium well to well.
Using a spatula, carefully flip each hamburger patty.
Add toppings such as onions or cooked bacon under the cheese and allow them to melt together while the burgers continue to cook or leave them plain. Cook the burgers for an additional 4-5 or 7-8 minutes depending on your desired doneness.
Transfer the hamburgers to a hamburger bun or plate. Drain the excess oil and repeat cooking steps 2 through 5 until the remaining patties are cooked.
